I started in hospitality in 1992. Not as a consultant. As someone who cleaned tables, ran kitchens, managed shifts, and eventually ran operations across 21 sites in London. That background is what I bring to every engagement. Not theory. Not a framework from a textbook. Actual experience of what happens when the wheels come off -- and what it takes to get them turning again.
Thirty years does something to how you see a business. You stop looking at the numbers in isolation. You start reading the room. The energy in the kitchen at six on a Friday. The body language of a team that's stopped believing in the place they work. The menu that's trying to do too many things and doing none of them well. None of that shows up in a spreadsheet. But it all shows up in your results.

I work with hospitality businesses that are struggling, stalled, or starting to wonder if it's worth carrying on. Sometimes the fix is structural -- financial restructuring, procurement, menu rationalisation. Sometimes it's operational -- systems, standards, the way shifts are run. Sometimes it's people, and that's usually the hardest and most important piece. Whatever the problem, I go looking for the actual cause, not the most obvious one.
